Tikur qimmem means black spice and is intended to go in dark, spicy, red stews.
The main ingredient is Ethiopian black cumin (nigella seeds), giving tikur qimmem its distinct smoky flavour. The korerima adds a minty note. We mainly use this blend in spicy red stews but it is a great addition to saut_s too. We love using it in Ye'Metbesha Miser (red lentil stew) and Ye'Duba Wot (squash stew). This is the one. This tikur qimmem has that deep, smoky tikur azmud (nigella) flavour. It's essential for a proper misir wot. This is a high-quality, fragrant blend.
I'm so glad I bought this. I add it to my red lentil stew and the Ye'Duba Wot (squash stew) from the eBook, and it adds an incredible, smoky depth that I couldn't put my finger on before. A little goes a long way!
