Telba, roasted Ethiopian flax meal, can be used in two ways. Mixed with water or milk, it is made into a sweet drink. It is also blended with a range of herbs and spices and used in savoury dishes, as we are presenting it here. Telba is hugely popular during the fasting season. I had no idea you could use flax like this. It's savoury, nutty, and slightly tangy. I've been sprinkling it on my avocado toast (as suggested), and it's a total game-changer.
This is a perfect telba blend. It has really nice herbs (holy basil, rue). It makes such a delicous fitfit just like I remember, and it's great sprinkled on salads.
