Teff is a naturally gluten-free grain packed with lots of nutrients and minerals. It is a staple food in Ethiopia and across the horn of Africa. In Ethiopia, it is mainly used to make injera, a fermented sourdough pancake-like bread.

I've been reading about teff as a superfood and wanted to try it. This brown teff has a lovely, rich, nutty flavour. It's fantastic for pancakes and as a gluten-free flour for baking in general.
