Nitter qibbeh is a spiced clarified butter traditionally made with cow's milk, but it can also be made with non-dairy butter or with oil. The process of clarification separates the fat from the milk solids and water. The result is a highly flavourful cooking fat. It has a higher smoke point and longer shelf life than regular butter.
As it is difficult to get hold of the spices used for clarification, we have created our own blend which will help you make nitter qibbeh at home. Amaarech's recipe uses premium ingredients, bringing out the distinctive qibbeh aromatics. Having a supply of nitter qibbeh in your fridge allows you to add flavour to your cooking in an easy and efficient manner. We usually add qibbeh at the end of the cooking process to round out the flavours.
Use 30 grams of our qibbeh manteria blend for 2.5 kg of butter (this will yield approximately 2 kg of nitter qibbeh).
Ingredients: Koseret, korerima, holy basil, thyme, dried garlic, Ethiopian black cumin (nigella seeds), Ethiopian caraway seeds (ajowan), and fenugreek
As someone who is plant-based, I thought I'd never get that authentic niter kibbeh flavour. I infused this blend into my vegan butter (with coconut oil), and... wow. The aroma is incredible (that cardamom!). It's the secret ingredient I've been missing.
This is a beautiful kibbeh blend. It has the right balance and isn't overpowering. Smells just like my mom's kitchen when she's making it. So happy to have found this.
This spice blend is so fresh and fragrant � I have used it to make kitfo with optimal results.
I grew up in Ethiopia (white skin, Ethiopian blood) and as I get older I crave home cooking more than ever. I make my own Ethiopian food (except ingera which I buy) .... but have never got it quite right without Qibbeh. I was so excited to get these spices but didn't think I'd stand over a pot stirring so tried it in the slow cooker The aroma of qibbeh filled the house for hours, and lingered. It was FABULOUS. I bought this for a specific recipe, but now I find myself sprinkling it on everything. It's amazing on roasted vegetables, in lentil soup, and even on my morning eggs. Such a beautiful, warm, and unique blend.
