Nech qimmem means white spice and we mainly use it in mild, light-coloured stews and sauté.
Amaarech's original recipe uses Ethiopian caraway seeds (also referred to as ajowan or bishop's weed), korerima, and garlic, which are washed, dried, toasted, ground, and blended together. Nech qimmem has notes of cumin, oregano, and thyme. It will add flavour to any vegetable dish and is also great in roasts. You can find plenty of recipes in my ebook.

I bought this with the Tikur Qimmem to understand the difference. This Nech Qimmem is amazing in my Kik Alecha (yellow split peas). It's bright and aromatic, with a hint of oregano-like flavour. Love it.
This is the qimmem for alecha. It's not nech azmud (ajowan) alone; it's a full blend. It's balanced and smells wonderful. My dinich wot (potato stew) tasted just right.
