Mekelesha is the secret ingredient that will lift your stews to the next level of food heaven. The blend consists of seven hand-roasted spices selected by Amaarech herself. Among them are Ethiopian cardamom, nutmeg, and pepper, giving this blend an autumny profile. Our mekelesha is very concentrated so a little goes a long way.
Mekelesha is used in many red stews such as Ye'Metbesha Miser (red lentil stew) and Ye'Duba Wot (squash stew) _ both recipes can be found in my ebook _ but it will add flavor to all slow-cooked stews. It is normally added at the end of the cooking process.
Ingredients: Ethiopian nutmeg (gewz), Ethiopian cardamom (korerima), cinnamon, black pepper, cumin, Indian long pepper (timiz), and cloves
I'm new to this, but I added it at the end of my lentil stew as Helen suggested. WOW. The aroma is incredible. It's warm, peppery, and sweet all at once. It's like a secret weapon for flavour.
A wot is not complete without mekelesha at the end. This is a perfect, balanced blend. It has the right amount of everything. Just a pinch adds that beautiful aroma that says "it's ready."
I didn't know what a "finishing spice" was. Now I don't think I can cook without it. It adds a brightness and warmth that's hard to describe. I've even tried it on non-Ethiopian stews, baked goods, and it's amazing.
This is a proper mekelesha. The spices are so fresh and fragrant, you can tell it's made at home. You only need a little bit. Very happy with this.
Just what my dish needed This is a great mix, I added it to my Abish Wat with 10 minutes cooking time left, and it really changed the already very good flavour to amazing. Highly recommended. I recommend this product.
