Ethiopian cardamom (also known as false cardamom) is one of the essential spices in Ethiopian cooking and probably the most expensive. It is part of the ginger family and tastes a bit like green cardamom, but it’s both more delicate and more intense. The flavour can be described as smoky and peppery with a touch of mint.
Korerima is a key ingredient in many of our spice blends. It can be used in the same way as black pepper, but use it sparingly and only when you want to impress! Our Ethiopian cardamom is pre-shelled, dried, roasted, and ground, and is ready for use. There are many recipes in my ebooks that use korerima.
Ingredients: Ethiopian cardamom
I'm so glad I read the description. This is nothing like the green cardamom I use for baking. It's smoky, peppery, and so complex. I've been using it as a finishing spice on stews (like the description says, "like black pepper"), and it's incredible.
This is the one. It's a key ingredient in berbere and mekelesha, and this one is perfectly roasted and ground. It has that strong, smoky, minty aroma. You can't make proper firfir without it.
First time trying this Ethiopian cardamom, and it's surprisingly versatile. I like using it on vegetables and fish; it adds a nice warmth. I also tried it in white pasta sauce instead of pepper, and it worked well. I'm excited to try it in other dishes. Highly recommended for anyone seeking a unique and flavorful spice.
