Black Barley Genfo Flour is the stuff you need to make Ethiopia’s favourite breakfast dish - genfo, or porridge. It’s nothing like the dish you probably associate with the word ‘porridge’. Genfo is neither thick nor runny but solid. It’s often enjoyed during special ceremonies like weddings or to celebrate the arrival of motherhood. Before serving, the genfo is shaped into a dome with a hole in the middle, which is filled with melted butter and berbere, making it look like an erupting volcano.
Our genfo flour is made from black barley. When mixed with water, its colour changes to a deep mahogany, delivering a uniquely nutty flavour. Packed with wholegrain goodness, black barley genfo is rich in fibre and protein.
