Mekelesha is the secret ingredient that will lift your stews to the next level of food heaven. The blend consists of seven hand-roasted spices selected by Amaarech herself. Among them are Ethiopian cardamom, nutmeg, and pepper, giving this blend an autumny profile. Our mekelesha is very concentrated so a little goes a long way.
Mekelesha is used in many red stews such as Ye'Metbesha Miser (red lentil stew) and Ye'Duba Wot (squash stew) – both recipes can be found in my ebook – but it will add flavor to all slow-cooked stews. It is normally added at the end of the cooking process.
